  Actually clueless fellow Americans, what you've stumbled across is an American bastardization of a centuries old method of gourmet "meat canning" called confit. According to wikipedia, "Confit is one of the oldest ways to preserve food, and is a speciality of southwestern France.". I've actually had authentic French Duck Confit like this, and it is both amazing (from health/culenary oddity perspective), as well as "tre yummay" in that, with the duck variety at least, is cooked and preserved in it's own fat
