Butchery is becoming a lost art. If you are (like me) going to use an animal for food, have the respect to use all of it and not waste anything. The speed and dexterity of this man's butcher skills is truly impressive.

  @Phoenix70 false the majority of the fat cooks away, and is left with very little fat and the rest is meat, they keep fat on the bacon and such so it doesn't get dry while cooking. Marbling is the most important thing in cooking.
