Ingredients:* 12 slices Genoa salami* 1 jarred red bell pepper, roughly chopped* 6 ounces queso fresco cheese, crumbledFor the Chimichurri Dressing:* 3 scallions, roughly chopped* 1/2 cup cilantro leaves, loosely packed* 1/4 cup oregano leaves, loosely packed* 1 jalapeno, seeds and ribs removed, roughly chopped* 1/4 cup olive oil* juice of 1/2 lemon* salt, to tasteDirectionsPreheat oven to 350 degrees F.Place salami slices on a cooling rack set on top of a baking sheet and place in the oven for 20 to 25 minutes, until edges curl up and salami is crispy but not burned. Remove from oven and set aside.Meanwhile make the Chimichurri Dressing: combine all ingredients in a food processor and puree until smooth. Set aside.Drizzle a tablespoon of Chimichurri Dressing over the top of each and serve.

Ingredients:* 4 cups lowfat yogurt* 1/2 cucumber, seeded and chopped* 1/4 cup fresh mint leaves* 1 garlic clove* 2 1/2 teaspoons hot sauce* Juice and zest of 1/2 a lemon* salt and freshly ground black pepper* Crudites platterDirectionsLine a layer of VIVA® towels inside a fine mesh strainer and place the strainer in a bowl. Pour the yogurt into the strainer, cover with plastic wrap and place in the refrigerator overnight to drain. The yogurt should reduce in volume by half and will have a very thick consistency.Place the yogurt, cucumber, mint, garlic, hot sauce, lemon juice and zest in a food processor and blend until smooth. Taste and season with salt and pepper. Transfer to a bowl. Refrigerate at least one hour before serving on a crudites platter.Presentation Tip:When serving the Tzatziki Sauce on a platter with crudites: Fold and dampen a VIVA® towel and place it underneath the bowl you are serving the Tzatziki Sauce on the platter.
