  It's a demonstration, not an actual contest, no points, no winners, no losers, pure demonstration. All martial arts do this. Rickson Gracie was the best grappler of his, he never lost, but he performed in many demonstrations as well. He tapped to show the move being put on him. You tap to show ending submission victory for your opponent. Fedor is in a class by himself. Heavyweights just don't move like that.....he would beat his brother 99 out of 100 times in a real contest. If you don't know by now
